   At the beginning, it was "as sweet as I could bear", but at the end, it is "of tears" and "when stiff and sore and scarred".

I think it is saying the sweetness of love, and how it all comes back to reality when time flies. "As sweet as I could bear" become "too much love", this is as if saying the poet was tired of love.
